Slow Cooker Brown Sugar Pineapple Chicken


 


Ingredients:


- 5 boneless, skinless chicken breasts (or thighs)

- 1 cup pineapple chunks, with juice (fresh or canned)

- 1/2 cup brown sugar (packed)

- 1/4 cup soy sauce

- 1/4 cup rice vinegar (or apple cider vinegar)

- 2 tablespoons ketchup

- 1 tablespoon minced garlic

- 1 teaspoon ground ginger (optional)

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper

- 1 tablespoon cornstarch (optional, for thickening)

- 1 tablespoon water (optional, for thickening)


Instructions:


1. Prepare the Sauce:  

   In a medium bowl, combine the pineapple chunks (with juice), brown sugar, soy sauce, rice vinegar, ketchup, minced garlic, ground ginger, salt, and pepper. Stir well to combine.


2. Add to Slow Cooker:  

   Place the chicken breasts (or thighs) in the bottom of your slow cooker. Pour the pineapple sauce mixture over the chicken, ensuring that the chicken is well coated.


3. Cook:  

   Cover the slow cooker and cook on low for 4-6 hours, or on high for 2-3 hours, until the chicken is fully cooked and tender. The internal temperature of the chicken should reach 165°F (74°C).


4. Thicken the Sauce (optional):  

   If you prefer a thicker sauce, mix the cornstarch and water in a small bowl to create a slurry. About 30 minutes before the end of the cooking time, stir the slurry into the sauce and cook on high for the remaining time to thicken the sauce.


5. Serve:  

   Once the chicken is cooked, remove it from the slow cooker. Serve the chicken with the pineapple sauce spooned over the top. This dish pairs wonderfully with rice, steamed vegetables, or a side of greens.
