Ingredients:
1 cup unsalted butter, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1/2 cup finely chopped pistachios
1/2 cup dried cherries, chopped
1 1/2 cups all-purpose flour
1/4 tsp salt
1/4 cup powdered sugar for rolling
Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter and powdered sugar until smooth and fluffy .
Add the vanilla extract and mix to combine .
In a separate bowl, whisk together the flour and salt .
Gradually add the dry ingredients to the butter mixture, mixing until just combined .
Gently fold in the chopped pistachios and dried cherries .
Roll the dough into 1-inch balls and place them on the prepared baking sheet .
Bake for 10-12 minutes, or until the edges are lightly golden . Remove from the oven and let them cool on the baking sheet for a few minutes.
While the cookies are still warm, roll them in powdered sugar to coat them thoroughly .
Let the cookies cool completely before serving or storing .
