Ingredients:
1 1/2 cups shredded coconut
1/2 cup sweetened condensed milk
1 teaspoon vanilla extract
2 cups semi-sweet chocolate chips
1 tablespoon coconut oil
Directions:
Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
In a medium bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix until well combined.
Press the coconut mixture evenly into the prepared baking pan.
Bake for 15-20 minutes, or until the edges turn golden brown. Let it cool completely.
In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring in between until smooth.
Pour the melted chocolate over the cooled coconut base and spread it evenly.
Refrigerate the bars for about 1 hour, or until the chocolate sets.
Cut into bars and serve.
