Ingredients
- 2kg leg ham on the bone, scored
- 1 tbsp wholegrain mustard, plus extra for serving (optional)
- 45g (1/4 cup, lightly packed) brown sugar
- 60ml (1/4 cup) maple syrup
- 2 tbsp dry sherry
Directions
Step 1: Prepare the Ham
Use a small sharp knife to cut around the shank of the ham, about 10cm from the end. Run the knife under the rind around the ham's edge, then carefully slide your fingers between the rind and the fat to lift the rind off in one piece. Score the fat in a diamond pattern.
Step 2: Add Flavors and Cook
Spread the mustard over the ham and sprinkle with brown sugar. Place the ham in the slow cooker and pour the maple syrup and sherry over it. Cook on High for 5 hours, turning the ham once or twice during cooking, until it becomes tender enough to be shredded.
Step 3: Shred and Glaze
Transfer the ham to a platter and gently shred it. Pour the cooking juices into a small saucepan, simmer over medium heat for about 8 minutes, or until it thickens and becomes sticky. Drizzle the glaze over the shredded ham and serve with extra mustard if desired.
